Yay, it’s wild garlic season! A lot of recipes come to mind where this herb shines through. The number 1 is a real winner: super intense and aromatic in taste – this Wild Garlic Pesto is a great basic recipe that you can use, for example, with pasta, as a spread on toast or as a meat rub. It gives your standard meal a great pop of taste and makes sure the meal has that little something extra.
Tip: Wild garlic is not always so easy to find – you’ll most likely find it on the farmer’s market or in an organic store. For those of you who really like wild garlic, it would be worth while just to buy one that’s in a pot and plant it in your garden.

Shopping List for roughly 350 g of Wild Garlic Pesto
100g wild garlic leaves
100g parmesan
100g almonds, chopped
olive oil (cold pressed)
pepper
salt
Preparation Time: approx. 15 minutes
Directions for the Wild Garlic Pesto:
Wash the garlic leaves, place them in a sieve or strainer to get most of the water off then completely dry them with a piece of paper towel. Set aside for now. Cut the parmesan into smaller pieces.
Roast the almonds in a non-stick pan until they are golden brown. Put the almonds, together with the wild garlic leaves and parmesan pieces, in a blender or food processor and mix until everything is very finel
