Shopping List for 4 portions of Fig Salad:
8 figs
100g Serrano ham
200g walnuts
1 tbs. forest honey
50g parmesan
120g corn salad (also known as lamb’s lettuce)
100g arugula
Salad Dressing:
5 tbs. olive oil
2 tbs. balsamic syrup
1 tbs. balsamic vinegar
3 tsp. honey
2 tsp. mustard
1 pinch salt
1 pinch pepper
Preparation Time: approx. 20 minutes
Directions for the Fig Salad with Serrano Ham and Walnuts:
Wash the corn salad and arugula and let dry in a strainer or dry in a salad spinner. Wash the figs and cut off both ends of each fig. Cut into quarters and finally into thin slices. Put the walnuts in a pan and roast on high heat. They should roast enough while the pan is heating up, and once the pan is really hot add the forest honey and stir to coat the walnuts. Once coated, quickly remove from the burner so the walnuts don’t burn.
Honey-Mustard Dressing with Balsamic:
Mix the olive oil with the mustard, honey, balsamic syrup and balsamic vinegar. Refine the mixture with a pinch of salt and pepper. And finished!
Mix together the corn salad and arugula and cut or tear the Serrano ham into thin strips. Put everything, together with the figs and walnuts, into a salad bowl and drizzle the Honey-Mustard Dressing over top. To finish, toss the salad together well and serve. Over each portion, grate some thin Parmesan pieces. And just like that you have a salad that will impress.
