This fresh Vegetable-Fruit Salad is the perfect Wake-Up Kick in the Morning: Pineapple and Grapes meet Gherkin and Mint, with some fine tuning from Apple and Blueberries. Low calories, creative combination and less effort – three very good reasons to give this healthy Vegetable-Fruit Salad a try!

Recipe:

Shopping List for 4 portions of Vegetable-Fruit Salad of Pineapple and Grapes with Gherkin an Mint:

1 Pineapple
500 g Grapes (green or red)
1 Gherkin
1 Apple
125 g Blueberries
10 g Mint Leaves

Preparation Time: approx. 10 minutes

Directions for the Vegetable-Fruit Salad with Pineapple and Grapes with Gherkin and Mint:

Cut the shell off the pineapple and cut then the fruit in cubes about the size of 2 centimeters. If you only like the sweet parts of the pineapple, you should cut out the part in the middle, which is a bit bitter. Put all the cubes in a big salad bowl.

Wash the gherkin and the apple afterwards. Halfen the gherkin and cut it in small slices. Then you quarter the apple, remove the middle part with the pits and cut the quarters in small slices too. Now you wash the grapes and the blueberries and then you put them in the bowl to other ingredients.

Finally you wash the mint leaves and pat them dry carefully with a kitchen paper. Pluck the mint leaves in small pieces and put them over the other ingredients in the salad bowl. Now you quirl all the ingredients together and then you arrange the Vegetable-Fruit Salad on four plates. Enjoy this delicious meal!
