For those times when you need a fresh cake for your spread and it must be made quickly, mug cakes are the answer: a wonderful, fruity version is a Blueberry Streusel Cake in a Mug – modern, cute and so yummy. You will be surprised by how easy you can bake a fresh, warm Mug Cake.

Shopping List for 2 small mugs or 1 large mug of Blueberry Streusel Mug Cake:
Blueberry Dough:
10 blueberries
2 rows of a white chocolate bar
¼ cup all purpose flour
¼ tsp. baking powder
2 tbs. granulated sugar
3 tbs. milk
1 tbs. olive oil
Streusel Topping:
½ tbs. cold butter
1 tbs. all purpose flour
1 ½ tbs. brown sugar
½ tsp. cinnemon
Preparation Time: approx. 6 minutes (5 minutes to prepare the dough, 1 minute in the microwave)
Directions for the Blueberry Streusel Mug Cake:
Wash the blueberries and set aside. Chop the chocolate into large chunks and set aside as well. In a bowl, mix together the rest of the dough ingredients: the flour, baking powder, sugar, milk and olive oil. Once you have a smooth dough, carefully fold in the chocolate, and finally the blueberries.
Put the dough in either 1 large mug or 2 small mugs and now you can make the Streusel Topping: using an electric mixer with the dough hook attached, mix together the butter, flour, brown sugar and cinnamon until you have large crumbly streusel. Spread the streusel generously over the blueberry dough and place the mug or mugs in the microwave and bake on the highest heat for 1 minute.
Let the mug cool a bit before serving.
