We can feel spring on it’s way, so let’s reflect that in our cooking. Enjoy the first rays of warm sun along with this crisp fruity Asparagus-Strawberry Salad with Sheep’s Cheese and Avocado. It’s quick to make and healthy to eat. Cheers to spring!
Recipe:
Shopping List for 4 portions:
500g Strawberries (including strawberries for the dressing)
500g asparagus (white or green)
200g sheep’s cheese
1 avocado
a drizzle of olive oil
Salad Dressing:
4 strawberries out of the 500g listed above
1 tbs. balsamic syrup
2 tbs. white wine vinegar
2 tbs. cold pressed olive oil
Preparation Time: approx. 20 minutes
Directions for the Asparagus-Strawberry Salad with Sheep’s Cheese and Avocado:
Wash the asparagus, (if you’re using white asparagus then wash and peel) and cut into bite size pieces. Drizzle some olive oil into a frying pan and heat on high. Add the asparagus and fry for about 2 minutes, so it stays nice and crispy. Put the asparagus in your salad bowl, and let it cool down.
While the asparagus is cooling, prepare the dressing. Puree the 4 strawberries and mix that with the balsamic syrup, white wine vinegar and olive oil. Already finished!
Wash the strawberries and avocado, cut into pieces and add to the asparagus in the salad bowl. Add the cheese by simply crumbling it into pieces with your fingers over the salad. (Or cut into pieces and add)
Just before serving, add the dressing and mix everything together. Now just enjoy this delicious spring salad!
