What’s the difference between cupcakes and muffins? Cupcakes are usually sweeter, have icing on them and are basically mini cakes, more a dessert. Muffins are usually more of a breakfast food, without icing and not as sweet. They also usually have some kind of fruit in them. The positives for both are similar: really you can put them on any buffet and they will be gobbled up before you know it: these chocolate cupcakes will sweeten up your day… and adding the chocolate glaze… yummm
Shopping List for 30 chocolate cupcakes
Chocolate Cupcakes:
2 ¼ cups all purpose flour
¾ cup unsweetened cocoa powder
¾ cup packed brown sugar
½ cup granulated sugar
2 tsp. baking powder
½ tsp. salt
1 cup whole milk
1 cup vegetable oil
3 large eggs, at room temperature
1 cup sour cream, at room temperature
1 tsp. vanilla extract
Chocolate Glaze:
1/3 cup chocolate of your choice: semi-sweet, milk, white
¼ cup water
1 tbs. butter
1 cup confectioners’ sugar (powdered sugar)
½ tsp. vanilla extract
Preparation Time: approx. 30 minutes
Directions for the Chocolate Cupcakes:
Whisk together the flour, cocoa, both sugars, baking powder and salt. Using an electric mixer on medium high speed beat the milk and oil into the flour mixture until well combined. Add the eggs one at a time, beating until each egg is well incorporated. Add sour cream and vanilla and beat just until it’s combined. Your cupcake batter is ready.
Preheat the oven to 175 C
Line muffin tins with paper liners (If you aren’t using paper liners, grease with butter – if using silicon you don’t need to grease)
Pour the batter evenly among the cups, filling each halfway. Bake the chocolate cupcakes for 18-20 minutes until they have raised and are baked through. (To check if they are baked through, insert a toothpick into the middle of the cupcake. If it comes out clean they are done.)
