This fig recipe with goat cheese is definitely a delight for your palate – whether served an as appetizer or a dessert. The preparation is easy, and the result is refined: What more can one want?
Recipe:
Shopping List for 4 portions
10 figs
1 1/8 cup goat cream cheese
2 tbs. granulated sugar
1/3 cup butter
150 mL dry red wine
3 sprigs rosemary
2 tsp. balsamic vinegar
1 pinch pepper
Preparation Time: approx. 30 minutes
Directions for the Figs with Goat Cheese:
Chop the leaves from one sprig of rosemary into fine pieces and mix into the goat cream cheese. Add pepper to taste. (A pinch should do)
Wash the figs, remove the stems, and cut the figs in half lengthwise.
In a non-stick pan caramelize the butter and sugar.
As you caramelize the butter and sugar heat the oven to 338 Fahrenheit. When the butter and sugar are caramelized, place the figs cut side down into the pan. Add the red wine and the remaining 2 swigs of rosemary (whole). Make sure the figs remain cut side down.
After 10 minutes place the figs cut side up in a casserole dish. Pour the sauce from the pan over the figs. Place a dollop of the goat cream cheese on top of each fig. Add the rosemary again and place in the oven for 10 minutes.
When serving add a bit of balsamic vinegar to add a nice extra touch.
