Shopping List for 1 Cake
for the Plum Cake:
1 kilo plums
3 eggs
2/3 cup butter
2/3 cup granulated sugar
1 cup all purpose flour
3 tsp. baking powder
2 tsp. vanilla sugar
for the Streusel:
2/3 cup cold butter
1/2 cup granulated sugar
1 7/8 cup all purpose flour
2 tsp. vanilla sugar
Preparation Time: approx. 1 hour
Directions for the Plum Cake:
Mix together the sugar, vanilla sugar, eggs, butter, baking powder and flour in a bowl until they form a dough. The dough is the base of the plum cake.
Grease, with butter, and flour your baking pan so your cake doesn’t stick to it. Spread the dough evenly along the bottom of pan.
Wash and cut the plums in half. Remove the pits then slice into 1 cm thick slices and layer on top of the cake dough.
For the streusel mix together the cold butter, vanilla sugar, sugar and flour. The longer you mix them the larger the pieces you will have. If it becomes more like a dough rather than streusel it’s no problem, just pinch together between your fingers to get little chunks. With your fingers, sprinkle the streusel over the plums.
Bake for 30 minutes at 356 Fahrenheit. When the streusel is golden brown your cake is ready.
Naturally you can also use the dough as the basic recipe for a cake using apple, pear or peaches …
