The process of making these orange rolls is a bit fiddly, but we liked them so much that we decided to include them anyway. Follow the directions exactly and, just as we were, you will be pleased with the beautifully decorative results.
Recipe:
Shopping List for 20 pieces
2 organic oranges
7/8 cup all purpose flour
1 cup confectioners (powder) sugar
1/2 cup butter
3 egg whites
Preparation Time: approx. 60 minutes
Directions for the orange rolls:
Melt the butter in the microwave or on the stove top. Wash the oranges with hot water and add the zest from the oranges to the melted butter. Add the flour, powder sugar and the 3 unbeaten egg whites and mix to a smooth thick batter.
Place baking paper on a baking sheet. Take 1 heaping tea spoon of the batter and spread into a very thin round form to about 7 cm in diameter.
You should put no more than 4 circles on one baking sheet at a time, because you have to form them very quickly after you take them from the oven.
Bake for 5 to 10 minutes at 356 Fahrenheit. As soon as the edges of the circles are a dark golden brown they are finished. Have a cake server and cooking/wooden spoon (with a round handle) to wrap them around already on hand. Also have a bowl of cold water on hand so you can cool your hands down between circles.
Now it has to go quickly: As soon as you take them from the oven, take the first circle off the baking paper with your cake server and begin to wrap it around your cooking spoon so it forms a roll. Now continue rolling the rest.
Granted, it’s not the easiest thing to make, but in the end, the wow factor it brings makes it worth the extra effort.
