Recipe:
Shopping List for 4 portions of Strawberry Cheesecake in a Glass
500g strawberries
600g cream cheese
the zest and juice of 1 organic lime or organic lemon
1 sprig of mint
100 g whole wheat graham crackers
125g butter
3 tsp. vanilla extract
3 tsp. starch
to taste:
10 to 20g vanilla sugar
Preparation Time: approx. 20 minutes
Directions for the Strawberry Cheesecake in a Glass:
Graham Cracker Base:
Melt the butter in a frying pan set on high heat. Crumble the crackers with your hands or place them in a sandwich bag and crush. (so it doesn’t get all over the place) Mix the crumbled cracker into the melted butter. Stir for about 2 minutes in the pan then remove from the heat and let it cool.
Cheesecake:
Put the cream cheese in a bowl. Add the zest and half the juice from the lime or lemon. With an electric mixer, mix in the vanilla extract and the starch. You can also add the 10 to 20g of vanilla sugar to sweeten it to your taste.
Assembly in the Glass:
For the base of the Cheesecake, fill the bottom of each glass to about 1 cm high with the graham cracker – butter mix. Cut about 6 strawberries in slices and place them so they are pushing up against the sides of the glass. Spoon the cream cheese into the middle of each glass until it just covers the top of the strawberries. Smooth the top out with the spoon.
Strawberry Sauce:
Puree about 8 strawberries. You can add a bit of sugar to the puree to sweeten it if you want, but normally the juice of the strawberries should make it sweet enough. And finally, pour the sauce on top of the cream cheese. Cut 2 strawberries in half and decorate each Cheesecake with one of the halves and a mint leaf.
