A classic when it comes to American and Canadian Christmas cookies: Shortbread. The fact that there are only 3 ingredients makes them a breeze to make. This culinary treasure is often coated or dipped in a chocolate glaze or sugar. Here we’ve stayed true to the original, without adding to it.

Shopping List for 30 biscuits
1 cup brown sugar
2 cups butter
4 cups all purpose flour
Preparation Time: approx. 40 minutes
Directions for the Shortbread:
Cream the butter and sugar together until creamy. Add the flour a cup at a time, mixing well in between each added cup. Mix until quite stiff. (It will seem quite dry)
With your hands, knead the dough for about 3 minutes until it is soft and smooth. (be careful not to knead for too long or it will be harder to roll out and form them to the shape you want.
Roll your dough out on a floured surface to about ½ inch thick and, with a knife, cut into rectangles. (or triangles, or whatever shape you want)
Place on a baking sheet with baking paper, and bake at 165 C for 20 – 25 minutes. When they are a pale gold color they are finished. Allow them to cool before you try moving them because they will break easily when they are still warm.
