Shopping List for 4 portions Lemon-Cream Yogurt with Berries
¾ cup whipping cream (200g)
½ cup confectioners’ sugar
2 tsp. vanilla sugar
½ tsp. vanilla extract
the juice of 1 lemon
325g natural yogurt
1 carton of strawberries (about 15 berries)
2 cartons (250g total) raspberries
4 shortbread cookies
Preparation Time: approx. 20 minutes
Chill Time: 2 hours
Directions for the Lemon-Cream Yogurt with Berries:
In a bowl, mix together with a spoon, the yogurt, lemon juice, vanilla sugar and vanilla extract and set aside.
In another bowl, beat the whipping cream and powdered sugar together with an electric mixer on high until soft peaks form.
With a spatula, fold the yogurt mix into the whipped cream mix, cover with cling wrap and place in the fridge to chill for 2 hours.
Just before the 2 hours is up, wash the berries and slice the strawberries. Then with a food processor, or just with your hands, finely crumble the shortbread cookies.
Assembly: Take the whipped mixture from the fridge and fill the bottom quarter of each cup with it. Next, add a layer of the strawberries and raspberries. Now add the rest of the whipped mixture, followed by the rest of the berries. And finally, just before serving, sprinkle the crumbled shortbread on top.
You can also try it with blueberries or whatever fruit you like!
