Homemade Muesli with Blueberries and Natural Yogurt

Breakfast is the most important meal of the day. Why? – it wakes us up and give us energy for the day. We want to be full from breakfast but not stuffed. Right now our favorite breakfast is made up of homemade muesli, natural yogurt and the fruit of your choice. The muesli is ready before you know it and you can put it together however you like – you can also make double the recipe to begin with, it stays good in tupperware for around 4 weeks.

Recipe:

Shopping List for 4 Breakfast portions

200g blueberries
1 L natural yogurt

Homemade Muesli:

100g rolled oats
40g mixed seeds (sunflower, pumpkin, pine nuts)
40g grated coconut
25g chopped walnuts
25g sesame seeds
75g honey
½ tbs. sunflower oil
¼ tsp. vanilla sugar
1 pinch salt

Preparation Time: approx. 25 minutes

Directions for the Homemade Muesli with Blueberries and Natural Yogurt:

Mix together the rolled oats, coconut, walnuts, sesame, and the seed mixture. Add the honey, sunflower oil, vanilla sugar and salt and combine well.

Spread the mixture over a baking sheet with baking paper and place in the oven for 10 to 15 minutes at 200 C. Stay close by because if it over bakes (it will get to dark in color) it will start to taste bitter. It’s finished when it’s a golden yellow color.

While your muesli is in the oven, wash the blueberries and fill a regular glass 1/3 full with the yogurt.

When the muesli is ready, add it on top of the yogurt in the glass, so the glass is now a total of 2/3’s full. Add around another 2 cm of yogurt on top of the muesli and to top it off, the blueberries – this healthy breakfast is ready. And you’re ready to start your day!
