Homemade Gnocchi with Gorgonzola-Spinach-Sauce

Homemade Gnocchi with Gorgonzola-Spinach Sauce

Making gnocchi yourself is really not hard, and tastes great. And if you combine it with our delicious Gorgonzola-Spinach-Sauce you can’t go wrong. Give this recipe a try and you won’t be let down!

Recipe:

Shopping List for 4 Gnocchi Portions

Gnocchi:

1 kg potatoes
1 egg
300g all purpose flour
salt

Gorgonzola-Spinach-Sauce:

150g gorgonzola
200g cream cheese
100ml milk
50g walnuts
50g spinach
1 tbs. maple syrup
1 tbs. butter
2 garlic cloves
½ a swig of rosmary
100g parmesan
1 pinch salt
2 pinches pepper
2 tbs. lemon juice (optional)
a bit of olive oil

Preparation Time: approx. 75 minutes

Directions for the Homemade Gnocchi with Gorgonzola-Spinach-Sauce:

Gnocchi:
Here you will find our easy recipe for making gnocchi.

Gorgonzola-Spinach-Sauce:
Break the walnuts into small pieces and toast them with a bit of olive oil in a frying pan, over high heat, on your stove top. Stir regularly so they don’t burn. Once all of the olive oil has been absorbed, pour in the maple syrup and stir so the walnuts are well coated in it. When the maple syrup has caramelized, add the butter to the pan. Then add the gorgonzola and cream cheese and let it melt.

While the cheese is melting, finely chop the garlic and wash and chop the rosemary needles to small piece. Stir the garlic, thyme and spinach into the sauce.

Now gradually add the milk until your sauce has the consistency/thickness you want. We recommend 100ml.

To finish, season with salt and pepper to your taste and serve with your homemade gnocchi. If you like, you can also add a bit of lemon juice. Finish off each plate by adding some shaved parmesan pieces. Your new favorite meal is ready!
