Party snacks have to be unhealthy to taste good – what a joke! This Salmon-Spinach-Cream Cheese Roll tastes great, is good for you and will be all eaten up before you know it. The preparation is easy and the reaction from your guests will be great. Have fun celebrating!
Recipe:
Shopping List for 1 roll – 15 slices
250g smoked salmon
3/4 cup creamed spinach
4 eggs
1/2 cup grated cheese (for example mozzarella)
1 cup cream cheese
1/8 cup parmesan
1 lemon
Preparation Time: approx. 30 minutes
Directions for the Salmon-Spinach-Cream Cheese Roll:
In a bowl beat the eggs until foamy. Add the spinach and grated cheese and season with salt and pepper to taste. Puree the mixture with an immersion blender until you have an even consistency. Place a piece of baking paper on a baking sheet and sprinkle the parmesan on the paper. Pour the egg-spinach-cheese mixture over the parmesan evenly and so there are no holes. Place in the oven for 10 minutes at 200 C until the spinach layer is firm.
Allow to cool, then turn over so that the side with the parmesan is facing up. Cover with the cream cheese and, on top of the cream cheese, evenly place the salmon. Squeeze some lemon juice over the salmon. Now, firmly roll together. Cut the roll into around 15 2 cm thick slices.
Serve this tasty finger food with baguette and horseradish or on it’s own with a selection of other party snacks.
Tip: if you use cling wrap or aluminum foil to roll the salmon-spinach-cream cheese roll together and then allow it to rest it will be much easier to cut into the slices. Use party skewers to keep the slices from unrolling.
