This delicious salad is a great Vitamin kick and you can make it all year round: crisp cucumber, sweet mango and hearty sheep’s cheese – it will fill you up and is at the same time very healthy. With the cranberry yoghurt dressing, it’s a delight to eat.

Shopping List for 4 people
2 cucumbers
1 mango
200g sheep’s cheese
4 tbs. natural yoghurt
3 tsp. cranberry compote
1 tsp. olive oil
2 tsp. Balsamic syrup
Preparation Time: approx. 15 minutes
Directions for the Cucumber-Mango-Sheep’s Cheese Salad:
Wash the cucumbers. Then save some time and leave the peel on. (this is also where a lot of the vitamins are) Chop off both ends then cut the cucumber in half long ways. Now just chop into 5mm thick half circle pieces.
Next, cut the sheep’s cheese into 5 mm sized cubes and add, along with the cucumber, into your salad bowl. Peel the mango and cut into cubes as well.
Now all that’s missing is the salad dressing: Mix together the yoghurt with the cranberry compote, olive oil, and balsamic syrup.
Just before serving, mix the dressing into the salad – your crisp and fresh salad is finished quick as that.
