North Americans love their cranberries! And understandably so, they taste delicious! At Christmas time we especially recommend these tasty Cranberry-Walnut Muffins with a hint of orange. They fit nicely as dessert after your Christmas dinner, or as something different to eat in between all the Christmas cookies.
Recipe:
Shopping List for 12 muffins
1 cup fresh cranberries (if you can’t find any, thawed out frozen ones will work)
¼ cup chopped walnuts
3 organic oranges (or the grated peel of one orange and ¾ cup of orange juice)
1 beaten egg
½ cup granulated sugar
1 ½ cup all purpose flour
1/3 cup melted butter
1 tsp. salt
½ tsp. cinnamon
¼ tsp. mixed spice
2 tsp. baking powder
Preparation Time: approx. 40 minutes
Directions for the Cranberry-Walnut Muffins:
Wash the cranberries and chop into small pieces. Sprinkle ¼ cup of the sugar over them, mix and set aside.
In a bowl and with a spoon, stir together the flour, the other ¼ cup sugar, baking powder, salt, cinnamon, and mixed spice and make a well in the center. In another bowl combine the egg, orange peel, orange juice and melted butter. Pour all at once into the well of the flour mixture and stir together. Fold in the cranberry mix and nuts.
Fill greased muffin tray and bake at 375 Fahrenheit 15 – 20 minutes until they have risen and are golden brown.
They taste the best when they are nice and warm, but they stay crispy and moist later on as well.
