Baked Apple with Vanilla Sauce

Baked Apple with Vanilla Sauce

Every meal should have a great ending. This Christmas we insist it be our Baked Apples. This dessert is juicy, nutty, creamy and sweet – it’s the perfect ending to a big Christmas meal.

Recipe:

Shopping List for 4 people

Baked Apple:

4 large apples (for example boskoop apples)
200g marzipan
100g chopped almonds
40g butter

Vanilla Sauce:

the inside from 2 vanilla beans
8g vanilla sugar
300mL milk and 3 tbs. milk
5 egg yolks
3 tbs. granulated sugar
1 tbs. cornstarch

Preparation Time: approx. 40 minutes

Directions for the Baked Apple with Vanilla Sauce:

Baked Apples:
Wash, peel and core the apples. (Without cutting them in half) Knead together the marzipan and chopped almonds. Fill the apple centers with the marzipan mix. Wrap the bottom half of each apple in aluminum foil so that, while they are baking, the filling doesn’t run out. On each apple spread 1 cube (10g) of butter over the filling.

Place the apples on a baking sheet with baking paper and bake at 200 C for 10 minutes. When the apples begin to turn golden brown they are ready.

Vanilla Sauce:
Remove the insides from the vanilla beans and mix together with the vanilla sugar and 300 mL milk. Warm the mixture up in the microwave. (Just so it’s warm, not boiling) Mix the sugar with the egg yolks until foamy. Add to the warmed up milk mixture and continue mixing. Separately mix the extra 3 tbs. milk with the cornstarch, then add this to the vanilla sauce and mix until it thickens slightly.

You may now serve your warm baked apples with vanilla sauce to your awaiting guests!
