These Baked Apple Muffins are the modern twist on the classic Baked Apple Dessert and are of course just as moist, aromatic and Christmassy good! – the perfect choice to accompany your Christmas party!

Shopping List for 12 Baked Apple Muffins
2 1/2 apples
3/4 cup chopped almonds
the inside from 1 vanilla bean
1/4 cup marzipan
2 tsp. rum essence
1 2/3 cup all purpose flour
3 tsp. baking powder
7/8 cup confectioners (powder) sugar
1/4 cup butter
2 eggs
150 mL milk
100 mL sunflower oil
1 pinch salt
Streusel:
1/2 cup all purpose flour
1/8 cup granulated sugar
1/8 cup softened butter
1 tbs. Speculaas spice (a blend of cinnamon, orange zest, lemon zest, cardamom, cloves, nutmeg, ginger)
Preparation Time: approx. 60 minutes
Directions for the Baked Apple Muffins:
For the muffin dough, mix together the flour, baking powder, butter, powder sugar with the 2 eggs, milk and sunflower oil. Add and mix in the marzipan and chopped almonds.
Peel the apple and chop into small cubes. Remove the inside of the vanilla bean and add it together with the apples and along with the salt and the rum essence.
Fill the forms ¾ full with your mixture.
For the streussel: beat, with the dough hooks on your mixer, the butter, sugar, flour and speculaas spice until it’s a crumby sandy texture. Sprinkle on top of the dough in the forms.
At 356 Fahrenheit, bake for 25 minutes until they are raised and are golden brown.
Of course you may vary the recipe to your taste: for example leaving the marzipan out and or adding 50g of raisins to the rum essence.
