Homemade Lasagne Noodles

Homemade Lasagne Noodles

Do you know anyone who doesn’t like lasagne? We’ve never come across anyone who doesn’t. If you’re already experienced at making lasagne and want to try something new, then give making the noodles yourself a try. Here you will see just how to do that.

Recipe:

Shopping List for enough noodles for 1 casserole dish sized lasagne or 12 Mini Lasagne Cups

400g all purpose flour
4 eggs
4 tbs. water

Preparation Time: approx. 10 minutes
Resting Time in the Fridge: approx. 30 minutes

Directions for the Homemade Lasagne Noodles:

Pour the flour into a bowl and make a well in the center. Add the eggs and the water to the well. Begin mixing everything together with a spoon then continue by kneading with your hands until it’s completely smooth.

Make a ball with the dough and wrap it in cling wrap. Place in the fridge for 30 minutes.

After the 30 minutes, roll it out, between 2 pieces of baking paper, as thin as possible – about 2 – 3 mm thick.

Cut into rectangles if you’re making a classic lasagne. For Mini Lasagne Cups, cut into circles with a diameter about 4 cm larger than that of the baking tray forms you’re going to use.

In a pot of boiling water that’s well salted, cook the noodles for about 7 minutes. When they’re ready, pour into a strainer to get all the water off them and then use them as quickly as possible so they don’t start to stick together. If you aren’t going to use them right away, pour a bit of olive oil over them and pack them in some cling wrap.
